What will you be doing?

The Kitchen Manager is accountable for overseeing all kitchen operations, including food purchasing, preparation, and adherence to quality standards. Responsibilities encompass maintaining sanitation and cleanliness protocols, training kitchen staff in cooking methods and cost control, and supporting the Director of Food & Beverage in back-of-house operations for various outlets, banquets, and events.

Kitchen Manager responsibilities include, but are not limited to:

  • Order supplies, food, and ingredients in response to fluctuating demand
  • Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas
  • Monitor and regulate food holding and refrigeration temperatures to ensure compliance with safety standards
  • Recruit, coach, and provide training for kitchen personnel, assigning specific stations and conducting cross-training as needed
  • Develop and manage staff schedules to ensure adequate coverage and efficient operation
  • Conduct regular inventory checks to ensure accurate stock levels, performing comprehensive monthly audit
  • Schedule, track, and oversee maintenance and repairs for kitchen equipment
  • Collaborate on menu updates and adaptations, considering seasonal ingredient availability
  • Address guest inquiries and concerns directly, ensuring prompt resolution of any issue
  • Enforce strict adherence to sanitation practices and regulatory compliance standards, including those set by DHE
  • Exercise fiscal responsibility by managing budgets for food, labor, and supplies
  • Oversee the execution of banquet services, ensuring smooth and successful event
  • Other duties as assigned

What are we looking for?

  • Demonstrated leadership in team management in back-of-house (BOH) operations in a full-service restaurant setting.
  • Experience with FOH operations and bar knowledge preferred.
  • Ability to work a varied schedule, including evening shifts and weekends.
  • Experience with ordering, implementing effective inventory controls, and managing food and beverage costs.
  • Resort/hotel food & beverage experience is preferred.
  • Exhibits a strong level of enthusiasm and a flexible approach.
  • Strong attention to detail and exceptional communication skills to ensure guest satisfaction and uphold company service standards.
  • Ability to coach and guide associates, fostering teamwork, collaboration, responsibility, reliability, and honesty.
  • Proficiency with computers and general office PC applications (i.e. word processing, spreadsheets, databases).
